Ingredients
- 2 cups roasted rice flour
- 1 1/2 cups boiling water, as needed
- 1 teaspoon coconut oil
- Salt to taste
- 1 cup thick coconut milk
- 2 tablespoons sugar or jaggery syrup
- 1 pinch cardamom powder
Preparation
- Mix rice flour and salt in a bowl. Add boiling water gradually and knead into a soft dough.
- Grease the idiyappam press and plates with coconut oil.
- Press the dough into nests and steam for 8 to 10 minutes.
- Mix coconut milk with sugar or jaggery syrup and cardamom.
- Serve warm idiyappam with the coconut milk poured on the side.
