Thengapaal Idiyappam

Soft Kerala idiyappam served with lightly sweetened coconut milk, a simple breakfast and evening tiffin favourite.

Thengapaal Idiyappam

Ingredients

  • 2 cups roasted rice flour
  • 1 1/2 cups boiling water, as needed
  • 1 teaspoon coconut oil
  • Salt to taste
  • 1 cup thick coconut milk
  • 2 tablespoons sugar or jaggery syrup
  • 1 pinch cardamom powder

Preparation

  1. Mix rice flour and salt in a bowl. Add boiling water gradually and knead into a soft dough.
  2. Grease the idiyappam press and plates with coconut oil.
  3. Press the dough into nests and steam for 8 to 10 minutes.
  4. Mix coconut milk with sugar or jaggery syrup and cardamom.
  5. Serve warm idiyappam with the coconut milk poured on the side.
