Kerala Chicken Curry

Ingredients:

  • Chicken – ½ kg (cut into pieces)
  • Onion – 2 (finely chopped)
  • Tomato – 2 (chopped into small pieces)
  • Ginger-Garlic Paste – 1 tablespoon
  • Curry Leaves – 1 sprig
  • Coriander Powder – 1 ½ tablespoons
  • Chilli Powder – 1 tablespoon
  • Garam Masala – 1 teaspoon
  • Turmeric Powder – ½ teaspoon
  • Fennel Powder – 1 teaspoon
  • Coconut Milk – 1 cup (optional)
  • Oil – 2 tablespoons
  • Salt – as required

Preparation Method:

  1. Heat a pan and add oil.
  2. Add curry leaves and chopped onions, then sauté well.
  3. Once the onions turn golden brown, add the ginger-garlic paste and sauté thoroughly.
  4. Add the chopped tomatoes and cook slightly before adding turmeric powder, chilli powder, coriander powder, fennel powder, and salt. Stir well on low heat.
  5. Add the chicken pieces and mix them well with the masala.
  6. Pour enough water, cover the pan, and cook on medium heat until the chicken is fully cooked.
  7. Once the chicken is cooked, add coconut milk and let it thicken.
  8. Finally, add garam masala and mix well.
  9. Serve hot with rice, appam, parotta, or ghee rice!

Tip:

  • Adding crushed black pepper enhances the taste.
  • If you prefer a more traditional taste, cook without coconut milk and let it boil well.
