Ingredients
- 600 grams firm white fish, cut into pieces
- 1 onion, thinly sliced
- 1 tomato, sliced
- 1 inch ginger, julienned
- 3 green chillies, slit
- 1/2 teaspoon turmeric powder
- 1 cup thin coconut milk
- 1/2 cup thick coconut milk
- 2 sprigs curry leaves
- 2 tablespoons coconut oil
- Salt to taste
Preparation
- Rub fish with turmeric and salt, then keep aside for 10 minutes.
- Warm coconut oil and saute onion, ginger, green chillies, and curry leaves until soft.
- Add tomato and cook briefly, keeping the slices intact.
- Pour in thin coconut milk, add the fish, and simmer until the fish is cooked.
- Add thick coconut milk and swirl the pan gently. Do not boil after this stage.
- Rest for a few minutes and serve with appam, bread, or steamed rice.
